COOL RISING technologies for automatic process control in the bakery
High standards and flexible programming ensure a customized solution for your company. We have a solution for every product and special request: COOL RISING ® and COOL RISING PLUS allow for controlled fermentation in a chilled state with the lowest possible temperature difference. The prepared dough pieces are transferred to the chamber without intermediate fermentation. They are stored there for up to 48 hours (long-term storage).
After a slow, computer-controlled fermentation, the dough pieces can be removed from the system for at least 15 hours and then baked directly without determining the final proof. With COOL RISING® and COOL RISING PLUS, the internal temperature of the dough remains in the positive range, which means that all flavor-forming enzymes and biological cell cultures continue to work actively and in a controlled manner. This increases the value and quality of the product, increasing demand and saving energy at the same time.

Aromagid – flavor management
COOL RISING® and COOL RISING PLUS do not require long cooling phases at low temperatures. The fermentation process is not initiated. This means that the fermentation processes that create flavor and aroma do not stop, but continue in a controlled manner.
Work more efficiently
Compared to conventional dough management, you save 30-50% energy because the energy-consuming phase change from liquid water to ice in the dough pieces is eliminated. Cooling and fermentation take place in the same chamber, so dough pieces do not need to be transported from the freezing chamber to the frozen food storage chamber. Thanks to COOL RISING PLUS (for stacked boards), twice as many products can be stored in one place and a separate fermentation cabinet is not required in the establishment.
Control and quality
The special feature of COOL RISING® and COOL RISING PLUS is the slow, gradual cooling of the dough pieces, which consists of 8 individually controlled phases. The perfect interaction of temperature and humidity stops the movement of moisture from the crumb to the surface and prevents moisture from moving from the dough to the coldest point of the chamber, the evaporator. The pressure in the dough increases slowly. The glue structure is less stressed. Dough water swells better. Baked goods stay fresh longer.
