The initial phase of the dried fruit production process involves the use of complex equipment for storing, processing and preparing raw materials. Special containers are used to store raw materials.
Freeze-drying or lyophilisation drying takes place in three phases: freezing; primary drying (sublimation); secondary drying (adsorption).
Freeze-drying is the process of removing water from perishable products in order to extend their shelf life and/or prepare them for transportation. Freeze-drying is done by freezing the product, then reducing the pressure and applying heat to allow the frozen water to turn directly into steam (sublimate).

Equipment for drying fruits, vegetables and berries is selected individually depending on the production process. Such equipment includes infrared drying machines, conventional drying chambers, condensation dryers or deaerators, and drum and convection rotary dryers.
