Hot or cold smoking equipment can be supplied both as a finished product or individually made to your order. We can install the smoking chamber and configure it for the technological processes in your production.
Configurations and types of smoking chambers
Smoking chambers can be operated with wood chips or wood including steam and liquid smoke. The chambers are equipped with electric, steam or gas heating depending on your needs.
The type of chamber and its loading is determined by the customer. The chamber can be standard or through, where the products are loaded by trolleys or hooked inside the chamber. The transport process can also be automated.
Universal smoking chambers (commercial)
Iy is a very compact universal smoking chamber that features a friction smoke generator integrated in the door and a unique conical friction head with low noise and vibration.
The units in this series are completely multifunctional and therefore suitable for a wide range of applications. In addition to the usual methods of application, the installation is also widely used for the production of raw smoked sausages, sausages with a long shelf life, salty products and climatic smoking.
Multifunctional installations can be supplied as a single trolley model in various sizes or as a two-trolley model. Special sizes are available on request.
Equipment for creating a microclimate and maturation
Climate controlled maturation equipment is designed for the maturation, drying and storage of all types of raw sausages and chicken thighs as well as products with an average shelf life. Another application is air drying specialty meat products such as beef jerky, fish and vegetarian products.
Depending on the process of the ripening stage, the installation can be operated with a fresh air supply. The advantage of this system, with its strict control parameters, is that the temperature and humidity values are maintained at exactly the desired level at all times.
Intensive cooling systems
Intensive cooling systems are used to cool cooked foods quickly, safely and economically. Due to the rapid passage through critical temperature ranges, the shelf life and quality of the products are significantly improved.
The optional cooking function makes the equipment more versatile in terms of application. The units operate with a vertical air supply and are particularly well suited for vertically suspended products. With the correct load, they are also suitable for products in a horizontal position. The intensive cooling equipment is available in all sizes, with capacities from 1 to 14 trolleys, and in a single-row design.
Defrosting systems stand out for their economical and gentle operation. Whether it is thin deep-frozen products without packaging or thick packaged frozen blocks, these systems are suitable for every product and process.
The products are gently defrosted by an air stream, and the intelligent process control system ensures that the operation is carried out as quickly and reliably as possible. Hygiene and drainage losses are also taken into account and optimised.
The systems have the option of switching to a predefined “cold storage” mode after defrosting, which keeps the defrosted products chilled for as long as required.
