The configuration of the industrial smoke chambers is offered in four variants: Pre-maturing, smoking; Maturing, drying, smoking; Pre-maturing, drying; Maturing, air drying.

Pre-maturing / smoking. The climate-controlled cold smoking and pre-ripening units work completely independently of weather conditions with circulation air conditioning and with low energy consumption. Depending on the process and the maturity condition, the unit can be operated with fresh air. The benefits of this system with its precise control are its constantly exact temperatures and moisture levels according to the specified target values. The unit can be combined with all smoke generation systems (available on our website). The systems also feature an integrated, fully automated, one-piece cleaning system.
Preliminary maturing / drying / smoking (two-channel system). Such climate-controlled cold smoke maturation systems operate with circulating air conditioning completely independent of the weather and with low energy consumption. Depending on the process and degree of maturation, the system can be operated with a fresh air supply. The advantages of the system are always accurate temperature and humidity values according to the given setpoints. Vertical and horizontal air injection allows you to combine both directions of drying in one system. This creates optimized ripening and drying conditions for short processes with maximum uniformity.
Pre-maturing / drying. These climate-controlled ripening plants condition the air and operate completely independent of atmospheric influences and with low energy consumption. Depending on the technological process of the ripening stage, the unit can be operated with a fresh air supply. The advantages of this system are that the temperature and humidity are constantly maintained at exactly the desired level.

CLIMATIC COLD-SMOKING pre-maturing UNITS are designed for all pre-maturing, drying and cold-smoking processes of raw sausage and raw ham, as well as for semi-dry products. Other applications are air-drying and cold-smoking of special meat goods such as beef jerky, fish and vegetarian products. They are available for any desired number of chamber trolleys.
