Defrosting chambers

The food is gently defrosted by airflow, and the intelligent process control system ensures that the operation is carried out as quickly and reliably as possible. Hygiene and drainage losses are also taken into account and optimized.
Defrosting units have the option of switching to a predefined “cold storage” mode after defrosting, which keeps the defrosted food cool for as long as required.

How the defrosting chamber works
A very high level of humidity is set in the defrosting chamber at the start of the thawing process. The frozen surface of the product cools the moist air to below the dew point, so that the moisture on the surface of the product condenses and crystallises immediately there, due to the low surface temperature. As the liquid water changes phases to become solid ice, heat (heat of crystallisation) is released, causing the product to warm. After a thin layer of ice has formed on the surface of the product, the defrosting chamber is heated, causing the ice crystals to thaw once again.
This process is repeated until a specified surface temperature is reached. Then the system switches to pause mode and the fan, heating and humidification are switched off. The pause continues until the specified difference between the surface and core temperature has been reached. This cycle is repeated until the product reaches the desired core temperature.
Controlling the defrost chamber
A convenient touch screen controller with a brilliant TFT display and projected capacitive touch technology is used to control the defrosting system, and provides a variety of interfaces and an industry standard housing. The different interfaces allow data transfer between the touch panel and a PC. The visualisation program can be used to link the controllers to a higher-level program monitoring and logging function for temperature and moisture curves, processes, etc. This ensures comprehensive quality controlling for processed products in accordance with HACCP and IFS (ISO 9000).
The remote maintenance/activation system allows operators to manage the program and more from anywhere (internet).
