Vacuum massagers for meat
A vacuum massager for the meat industry is used to produce semi-finished products, pickles and smoked meats.
The device is a large drum in which pieces of food are thoroughly mixed. By creating a vacuum environment and balanced mechanical impact, meat fibers are effectively impregnated with brine and various spices. Softening of the tissues leads to accelerated and improved biochemical reactions.
The use of vacuum meat massagers
The meat massager is used in meat processing plants for marinating and mixing food products derived from beef, pork, and poultry.
This stage takes place during the salting of the specified products, taking into account full vacuuming. The procedure of mixing meat pieces is performed by uniform movements of the rotating drum.
The vacuum environment in such equipment has a positive effect on meat cooking, as it is qualitatively impregnated with brine and spices, while no disruption of protein compounds and tissue structure occurs. The result is whole pieces of meat that are not only deliciously cooked but also have an attractive presentation.
Optionally, the vacuum massager can be equipped with a cooling drum with a product temperature sensor. The vacuum meat tenderizer consists of a drum that is mounted on a rigid and massive frame. The drum has screw-shaped blades that provide gentle cascading mixing of meat products.
