Carcass classification systems
Semi-automated and fully automated systems for weighing and classifying livestock carcasses are technological solutions designed to classify carcasses according to their quality and characteristics.
This system can include various combinations of systems and technologies, such as weighing, scanning for flaws and classification, and volume scanning. For example, visualization technology can analyze data using artificial intelligence to classify carcasses accurately and efficiently.
Classification of livestock carcasses in the food industry
Classification systems for slaughtered animals and meat carcasses are diverse and vary significantly around the world. They are based on a differentiated approach and take into account such indicators as sex and age of the animal, live weight and fatness, yield of meat on bones, carcass configuration, thickness of the split, muscle eye area, chest girth, yield of meat – flesh, length of the carcass and its individual parts, color of fat and muscle tissue, etc.
Carcass classification systems are necessary for various purposes of meat processing, such as efficient further cutting with minimization of waste, assessment of product quality and its price, and obtaining an independent assessment of product quality. To classify carcasses, both manual devices and automatic carcass classification lines are used with their subsequent sorting.
Technology for classifying livestock carcasses
Various devices based on ultrasonic scanning or video recording and processing are used for evaluation without damaging the surface. The advantage of such devices is that they do not cause damage to muscle tissue, provide a hygienic way of working and objective measurement.
