COPRO – the refrigerated room with fermentation function The fermentation process is an important step in baking in the bakery. Breads, pastries and yeast doughs can only reach their full potential if the fermentation process is carried out correctly.
Yeast dough pieces that have been stored at low temperatures for a longer period of time have a much better flavor than pieces that have undergone a shorter, hotter proofing process.
Whether you choose the automatic fermentation chamber, the storage chamber or the fermentation chamber with humidity control – the COPRO series gives you full control over the settling and cooling processes. The floor of each COPRO system is made of stainless steel, as well as the door, which is also covered with polyurethane foam for optimal insulation. A heated door frame and high-strength door handles and hinges are also provided as standard. All COPRO systems are equipped with a number of sensors that allow bakers to closely monitor the processes. The control panel is integrated into the door, which is practical as it gives bakers a direct view of all ongoing processes in the chamber.
COPRO VA (fully automatic)
The COPRO VA combines fermentation and cooling in one device. This combination is crucial for productivity and results in the bakery. COPRO VA provides fully automatic fermentation and is suitable for a wide range of applications. The system provides fermentation as well as freezing and long-term storage of dough pieces. The fully automatic fermenter is also used to delay and interrupt fermentation. The possible temperature range is -25°C to +40°C.
COPRO TL (dough storage chamber)
The COPRO TL is ideal for freezing fresh preparations, cakes and bakery products, as well as for long-term storage. Various selectable options, such as a rapid cooling zone or an internal temperature sensor, make the daily work of the bakery much easier. The temperature range is from -25°C to 0°C.
COPRO GV (fermentation retarder)
The COPRO GV is a humidity-controlled refrigerated chamber for cooling fresh dough pieces, cakes and bakery products. WACHTEL’s fully automatic fermentation chamber allows you to perform several production steps in one device. In this chamber, the fermentation and cooling processes can be precisely controlled to slow down the fermentation and storage process. Important proofing conditions such as temperature and humidity can be adjusted via the IQ COOL control panel located at eye level on the chamber door. The temperature range is -5°C to +20°C.
